Hi guys, December is here and you know what that means; Christmas cookie season 🤤 I’ve been remaking popular recipes into a gluten free version and thought I would share them with you guys! This is one of the first ones I made. It turned out really good and can be very versatile! You can add chocolate chips, peppermint pieces, sprinkles, or so on.



INGREDIENTS:

1 cup Butter (room temp)
1 tsp. Vanilla extract
1 tbsp. Olive or Avocado oil
1 Egg
1/2 cup Powder Sugar
1/3 cup. Unsweetened Cocoa Powder
2 cups. Gluten Free Flour (I use Pillsbury best multi use gluten free flour)
1 tsp. Baking Soda
Pinch of Salt
1/2 tsp. All Spice
1 tsp. Stevia
½ to ¾ Cup Mix Ins (optional)
1 Powder Sugar



DIRECTIONS:


Preheat the oven to 350 degrees.


Mix together the butter & powdered sugar until creamy.


Mix in the oil, egg, and vanilla.


Incorporate the rest of the dry ingredients (salt, cocoa powder, baking soda, flour, stevia, all spice) in sections so powder won’t fly everywhere.


Scrape the sides of the bowl and then continue to mix it so you get everything incorporated.


Mix the add ins, if wanted.



Grease a cookie sheet or use a silicone mat.

Take a teaspoon of dough and make it into a ball.


Once you have all of them in balls put them in the fridge for at least 15 minutes to set up. (This makes them stay as a ball when baking and they have a better consistency)


Bake for 6 minutes then rotate the pan & cook for another 6 minutes. (12 minutes total) The oven can have hot spots which is why it’s important to rotate so they bake even.

Take them out of the oven and let them cool enough where you can handle them and then roll the cookies in powdered sugar.


Once your done with all the cookies you can re-roll them in powdered sugar again for more coverage and sweetness.

An easy way to tell if they are done cooking or not is if they are matte instead of shinny & starting to crack. These are super easy and only take about 30 minutes in total to make.
